  Special Pink Banana Butter    
 

3 ½ lbs. mashed ripe bananas (4 cups)
½ cup (or more) chopped roselle
½ cup lemon juice
3 cups sugar
1 tsp. butter

Place all ingredients in a large pot and bring to a hard rolling boil, stirring constantly.  Reduce heat and simmer for 20 minutes. Pour into hot, half-pint canning jars and seal with two piece lids.  Process in a boiling water bath for 10 minutes.  Makes 6 ½ pints.  Can even be used as a filling for cakes.

   
         
  Apple Banana Chutney      
 

4 lbs. apples                             1 Tbsp. salt
12 bananas                              1 Tbsp. curry powder
1 lb. onions                              2 cups sugar
5 cups cider vinegar               11/2 cups seedless raisins
1 tsp. ground ginger               1 tsp. cinnamon
1 tsp. dry mustard

Peel and core, then chop finely apples, bananas, and onions.
Place in a large pot and add raisins, salt and spices.  Add ½ the vinegar and simmer for 30 minutes.  Add sugar and the remaining vinegar and bring to a boil again, and simmer gently, stirring to dissolve sugar.  Continue simmering until chutney is thick. Pour into hot canning jars and seal with two piece lids.  Process in boiling water bath for 10 minutes.   Makes 4 pint jars.
